
Ingredients
1 tbs. ground allspice
1 tbs. dried thyme
1 1/2 tsp. cayenne pepper
1 1/2 tsp. freshly ground black pepper
1 1/2 tsp. ground sage
3/4 tsp. ground nutmeg
3/4 tsp. ground cinnamon
2 tbs. salt
2 tbs. garlic powder
1 tbs. sugar
1/4 cup olive oil
1/4 cup soy sauce
3/4 cup white vinegar
Juice of one lime
1 Scotch bonnet pepper (seeded and finely chopped)
1 cup white onion (chopped)
3 green onions (finely chopped)
4 chicken breasts
Directions
In a large bowl, combine all of the dry spices. Slowly add the wet ingredients whisking as you do. Add the pepper and onions and mix well.Marinate the chicken for at least an hour, longer if possible. Grill for about 6 minutes per side, or until done brushing with marinade. (or Bake for about 10 – 15 minutes @ 350)
